Sweet Corn and Coconut Chowder (three ingredients)

I was getting a quite tricky request from one soupguest lately, she was allergic to almost everything but she could eat sweetcorn on the cob and veg.based fat, so...

Think, think, whacka whacka, hmm hmm..

My Dairyfree SweetCorn and Coconut Chowder was born:


Ingredients:

  • 2 Cob of Corn
  • 1 Coconut
  • 2 tsp Dairyfree margarine
  • Salt
  • Pepper
  • Water

Boil one cob in salted water until done
Fry the other cob in mararine until dark but not burned
Crack the nut and save contained liquid
Remove brown skin from cocopulp and mix pulp with 2 cups of warm water
Strain cocomixture thoughfully into a pan and add liquid from initial coconut (Save and roast some of the pulp for garnish)
Remove corn from the rosted cob and add to the liquid
Add the rest of the margarine
Heat and season to taste
Boil gently for 5 minutes
Mix
Remove corn from the boiled cob and add to the soup
Boil gently for 5 minutes more
Plate in a bolw and drizzle some fried coconut, serve

Det blev riktigt gott (faktiskt), lite åt det söta hållet givetvis men med tre (3) ingredienser så måste jag anse detta lyckat, hoppas nu att denna soppa blir uppskattad den 12'e på sopplunchen :)
